Surprise Crabmeat Appetizer

After the death of my mother, I took over the responsibility of my sister’s care. Beverly, like some others with Down’s Syndrome, she had developed a weight issue. The challenge and mission was to change my sister’s lifestyle so that she could live healthier. After one year of routine exercise and a diet that excluded red meat, refined sugar and fatty foods, Beverly lost over 85 pounds.

  • ½ pack of 4 oz. sour cream cheese
  • 6oz. crabmeat
  • 1 tsp. reduced fat mayonnaise
  • ¼ teaspoon sea salt
  • ¼ teaspoon Worcestershire sauce
  • ¼ teaspoon paprika
  • 36 melba toast rounds
  • ¼ parsley flakes
  1. Beat sour cream cheese until soft. Add crabmeat, reduced fat Venenaise, sea salt, Worcestershire sauce, mix thoroughly.

  2. Spread bread rounds softly with generous amount of crabmeat mixture.

  3. Sprinkle with parsley flakes and paprika.

  4. Broil (low heat) 3 to 4 minutes or until golden brown

    *More flavorful when served hot
