Grilled Chicken Zucchini Ribbon “Pasta”

This recipe has it all – easy to prepare, delicious and pleasing to the eye! It’s also a perfect fit for anyone trying to eliminate carbs from their diets – they won't even miss the pasta when they taste the zucchini ribbons! It’s a great way to get kids to eat more vegetables, too!

Ingredients
  • ½ cup fresh grated Parmesan cheese
  • 4 oz. reduced-fat cream cheese
  • ¼ cup lightly packed fresh basil
  • 6 slices uncooked turkey bacon
  • 1 T. olive oil
  • 1 cup good quality Marinara sauce
  • 1- 1/2 lbs. boneless, skinless chicken breasts
  • 2 tablespoons garlic and herb rub
Instructions
  1. Grate Parmesan with Microplane fine grater.  Place cream cheese in a small, microwave-safe bowl; microwave uncovered for 15-20 seconds or until softened. Place Parmesan, cream cheese, basil and garlic/herb rub in manual food processor. Process until basil is finely chopped and mixture is blended. 

  2. Stack bacon slices and cut crosswise into ¼ inch pieces.  Place bacon and oil in 4 qt. rockcrok.  Cook over medium heat 7-8 minutes, stirring occasionally until lightly browned.

  3. Remove pan from heat.  Add cream cheese mixture to pan with bacon and gently stir until mixture combines.  Add zucchini, pour marinara sauce over zucchini and cover.  

  4. Microwave 5-7 minutes, stir until well coated with sauce.  Garnish with more Parmesan, salt and pepper to taste.
